Eight weeks of summer, and everything at once

The Nordic growing season is short, and that is the whole point. Slow growth in cold soil concentrates sugar and flavour, so a June carrot here tastes like a different vegetable altogether.

When the light finally arrives, everything happens at once: asparagus, new potatoes, strawberries, dill. You cook fast, you eat outdoors, and you accept that in ten weeks it will be over.
